VINEYARDS
Selected harvest from a unique vineyard “San Nicolás” which aims the exclusive production of rosé wines, raising the balance and aromatic strength of the grape. The harvest is done during the night.
WINEMAKING AND AGEING:
Selected night harvest of one only vineyard with management, especially oriented to the production of quality rosé wines, maximizing the balance and the aromatic power of the grapes. Prefermentative maceration at 4ºC for six hours in an inert atmosphere. Only the saignée must is then gravity-extracted. Alcoholic fermentation at a low temperature of 13ºC-14ºC.
TASTING NOTES
Satin pink with pale pinkish reflexes.
Characteristic attractive fruit aromas, especially acidic strawberries, and hints of flowers.
Subtle, round and balanced. Intense aftertaste of citrus fruits and an elegant and soft finale.
Salads, rice and pasta, cold meats, vegetables, white meat, omelette, fish and seafood.
Recommended service temperature: 10-12ºC
